Discover a fascinating and lesser-known facet of the Korean terroir with Balhyocha (literally "fermented tea"). Crafted by the Jirisan Farmers Village cooperative, this exceptional harvest comes from leaves gathered from wild tea trees (야생차) flourishing freely on the slopes of Mount Jirisan, the historic birthplace of tea in Korea.
In the Hadong region, this traditional black tea is affectionately known as Jaeksal. Historically, every family kept their own recipe, aging it in earthenware jars (Onggi) to enjoy as a comforting beverage during the harsh winter months.
The Tasting Experience: Balhyocha offers a magnificent amber liquor with copper reflections. On the palate, it is exceptionally round and entirely free of astringency (unlike many classic black teas). It reveals indulgent and woody notes of cocoa, caramelized sweet potato, dark honey, and toasted grains.
The Tea of Comfort: Significantly lower in caffeine than green tea, this deeply "grounding" brew is ideal for warming up in the afternoon or at the end of the day. It is the perfect after-dinner companion to help you unwind and soothe the mind.
Ancestral Savoir-Faire: The wild leaves are withered, carefully rolled to break their cells, and then left to ferment naturally in the open air before being dried. It is this slow, natural process that gives the tea its beautiful brown color and characteristic sweetness.
