What is Hwangcha?
Unlike green tea (Nokcha), which is heated immediately after harvest to stop oxidation, Hwangcha undergoes a delicate natural fermentation. After being withered, the leaves are wrapped in traditional paper or cloth to rest and "yellow."
It is this unique "yellowing" process that transforms the tea’s character: the scent of fresh grass gives way to notes of toasted grains, dried flowers, and molasses.
