If you visit the Maison Boseong plantations at dawn, the tea plants aren't the first thing you’ll see. Instead, you'll witness a sea of white clouds caressing the hillsides. This morning fog isn't just a photographer’s dream; it is the biological reason why Korean tea possesses such a distinctive sweetness.

A Natural Parasol Against Bitterness

The tea plant is sensitive. When exposed to harsh, direct sunlight, it produces tannins (catechins) as a defense mechanism. While these tannins naturally protect the leaf, they also impart a strong bitterness. In Boseong, the mist acts as a natural filter. By softening the light, it allows the leaves to grow slowly while preserving high levels of L-theanine, this amino acid responsible for its sweet and comforting flavor (Umami). It is thanks to this haze that our Sejak Green Tea remains so velvety, even after a long steep.
