As the warm weather returns, so does our craving for freshness. While hot green tea is a daily comfort, its iced version is a true summer revelation. A word of caution, though: simply letting a hot tea cool down is a world away from the magic of Cold Brew (cold infusion).

Today, Maison Boseong reveals the foolproof method to extract the very essence of our Sejak green tea, achieving a drink of absolute sweetness with zero bitterness.

1. Why Cold Infusion Changes Everything

Water temperature acts like an orchestra conductor for tea leaves:

Hot water quickly extracts tannins and catechins, which are responsible for the tea's astringency and bitterness.

Cold water, however, works with a gentle slowness. It only extracts amino acids (like L-theanine), which provide sweetness and that famous Umami flavor.

The result? A brilliant emerald liqueur—refreshing, silky smooth, and bursting with vibrant notes of cut grass and young hazelnuts.

2. Sejak: The Star of Cold Brew

For this method, our Sejak Green Tea is the ideal candidate. Harvested just after the Ujeon season, Sejak ("small sprouts") features tender leaves packed with springtime nutrients. When cold-brewed, it reveals an exceptional botanical freshness that offers instant hydration on hot summer days.

3. The Maison Boseong Recipe (Simple & Effortless)

Cold Brew requires only one secret ingredient: patience.

1.The Dosage: In a glass carafe or infusion bottle, add 10 to 15 grams of Sejak tea leaves (about 3 to 4 tablespoons).

2.The Water: Pour 1 liter of cold, filtered water over the leaves. Using low-mineral water is crucial to avoid masking the tea's delicate aromas.

3.The Rest: Place your carafe in the refrigerator for 6 to 8 hours—ideally overnight.

4.The Tasting: Strain the leaves. Serve in a beautiful clear glass with a few ice cubes. You can add a thin slice of cucumber or a sprig of fresh mint for an extra summer touch.
